New Discoveries Of The Week: Cool New Things I'm Trying, Books I'm Reading, And More!
Homemade Gut-Nourishing, Low-Calorie, Appetite-Satiating Gummies
Apple cider vinegar (ACV) provides a whole host of health benefits, from improving insulin sensitivity to lowering post-meal blood glucose, boosting digestion, supporting weight loss, and much more. However, the idea of chugging ACV throughout the day isn't exactly appealing to most folks, and understandably so.
So, what is my favorite new way to get all the benefits of ACV on a regular basis? Toss it into some convenient, delicious gummies, of course.
I recently found this recipe from Coconut Mama, and put my own spin on it by swapping out the raw honey for allulose, a low-calorie, zero-sugar sweetener (though you could certainly make yours with raw honey if you prefer). It also includes nourishing gelatin, which can help to heal and soothe the lining of the gut.
This recipe makes 20-24 gummies and only takes about five minutes to make.
- 1/4 cup water
- 3 Tbs grass-fed gelatin powder
- 2 Tbs lemon juice
- 2-3 Tbs allulose
- 1/2 cup raw apple cider vinegar
- 1/2 cup water (or apple juice to make sweeter gummies)
- Mix the gelatin and 1/4 cup water together in a small bowl and let it expand.
- Add in the lemon juice and allulose.
- Heat the ACV and remaining 1/2 cup water (or apple juice) over low heat until it is hot, but not boiling.
- Mix the ACV and water until the gelatin mixture until the gelatin dissolves.
- Pour the gummy mixture into molds and refrigerate until they set, about 35-40 minutes.
Voilà! You now have your very own homemade gut-nourishing, blood-sugar stabilizing gummies to enjoy throughout the day. Give this recipe a try and let me know how you liked it! :)
