New Discoveries Of The Week: Cool New Things I'm Trying, Books I'm Reading, And More!

The Most Mouthwatering Brisket That's Well Worth 60 (!) Hours

In a recent conversation with my father-in-law, the topic turned to BBQ (as is often the case, it seems) and the nature of preparing the perfect brisket. I commented that it would be interesting to actually “sous vide” (water bath cook at an even temperature) a brisket as an alternative to tending a grill for 24 hours and getting almost no sleep to nail the perfect brisket Texas-style BBQ.

Afterward, I decided to give this hair-brained idea a try…but rather than a day, committed THREE DAYS to this project.

First, I took three large US Wellness Meats briskets and marinated them in organic red wine, coffee, olive oil, salt, pepper, and fresh wild nettle from my backyard…for four hours. Next, I smoked the brisket on the Traeger at 165 degrees F with cherry pellets…for another four hours.

then, I transferred the brisket to heat-resistance plastic FoodSaver bags (normally I'd use Stasher bags, which are even better for sous vide, but they don't make them large enough for three briskets!) and placed into a giant five-gallon bucket sous vide water bath with my Joule sous vide wand set at 145 degrees F.

After walking away for 48 hours as the brisket sat in the sous vide, I came back, took my original marinade of red wine, coffee, olive oil, salt, pepper, and fresh wild nettle, simmered it down with non-GMO corn starch to make a thick gravy, then immersed the unwrapped brisket in the homemade gravy for a full hour to “rest” in the delicious gravy juices prior to dinner.

The final step, of course, was to slice the brisket “against the grain” and serve it along with a heaping spoonful of gravy to my 25 hungry dinner guests.

The result? The most mouthwatering smoked and sous vide brisket I've ever experienced in my entire life. This is obviously a project, and I don't know if it will, due to its time and complexity, even make it into Boundless Cookbook part II when I eventually write the sequel, but suffice to say: it's a bucket list experience to try a 60-hour brisket like this.

My Annual Popsicle Party Entry (That's Addictively Good)

If you missed this post last year, then you didn't yet see the results of the annual Greenfield summer popsicle party, in which all guests arrive with highly inventive popsicle parties to be judged in the ultimate popsicle competition, which includes everything from blueberry-lavender-creme-fraiche delights to American-apple-pie cold bites dipped in whipped cream.

For this year's popsicle, I returned to my theme of using the mighty Barukas nuts in my recipe. If you're not familiar with Barukas, go listen to my podcast with Darin Olien, in which we discuss this unique South American nut that tastes like an addictive, mouthwatering combination of a cashew and a peanut, and is actually very, very good for you in terms of its fatty acid composition.

Anyways, for my popsicle contribution this year, I prepared a Barukas Fudgesicle Popsicle.

Here's how to make enough for around 12 popsicles:

In a blender, blend at high speed for 2 minutes the following:

-2 avocadoes
-2 bananas
-2 tablespoons honey
-2 dropperfuls Omica Organics Vanilla Stevia (use code GREENFIELD to save 10%)
-2 teaspoons cinnamon
-1 heaping teaspoon sea salt or other good salt
-2 heaping tablespoons Barukas nut butter (this stuff is like crack!)
-4 tablespoons Organic Cacao Powder
-if desired for added “health” (and I did this): 1 heaping scoop Kion Clean Vanilla Whey Protein
-1 can organic, full fat coconut milk

After blending, pour into popsicle molds and freeze for five to six hours. Remove from molds, then dip each popsicle into Barukas nut butter, then dredge through Barukas trail mix (pre-pulverized in a blender or mortar and pestle), then cover with plastic wrap and re-freeze until ready to serve.

These things are addictively good. You must try.
