New Discoveries Of The Week: Cool New Things I'm Trying, Books I'm Reading, And More!
Melt-In-Your-Mouth Ribs In Minutes
This mouthwatering carnivore-esque food porn is a glimpse of a biohacked—and more importantly—a time-hacked recipe for the most delicious baby back ribs. I used many of the same biohacking and molecular gastronomy techniques that I teach within the pages of the Boundless Cookbook for this recipe.
This unique recipe is an easy way to create melt-in-your-mouth ribs in a fraction of the usual cooking time.
Here's how I prepared these bad boys:
- Trim the silver skin off the back of the ribs. This part is optional, but you’ll get better texture/cook. I get my ribs from US Wellness Meats (save 15% with code BEN).
- Rub them down with your favorite rub. In this case, I used turmeric, sea salt, black pepper, and Ceylon cinnamon.
- After rubbing them down generously, drench them in your favorite sauce—I used Primal Kitchen's dijon mustard and mango jalapeno BBQ sauce—or any other marinade of your choice. (Save 10% on Primal Kitchen with code BEN.)
- Throw them on the Traeger Grill or any smoker to smoke at 165°F (I used the pecan pellets for this one). This step isn't 100% necessary but gives you that authentic grill taste.
- Add bone broth to your pressure cooker, line your smoked ribs on the inside of the pot, and cook for 30 minutes.
- Finish them off by drizzling them with extra sauce, then broiling them in the oven for 5-8 minutes to get perfect caramelization.
And voila!—the most tender baby back ribs—as if I had left them on the grill for over 6 hours, but instead the pressure cooker does it in 30 minutes. Try it and let me know what you think! Also, what’s your favorite kitchen “tool” or time-saving hack these days?
