An Authentic Hawaiian Dinner On The Road For Less Than $20?

Hotel kitchenette homemade dinner in Molokai recently with my boys did not disappoint—for less than 20 bucks!

I love to figure out how to cook amazing meals with minimal ingredients while traveling. It’s a great budget hack too… and I’ve definitely come a long way from back in the day when I used to buy hot dogs and dip them in peanut butter as my grocery store meal (yes, for real).

We took a trip to the local grocery store and made a dinner that included:

  • Toasted avocados (literally, we toasted sliced avocado in a toaster and it wasn't half bad) smeared with mango butter we bought off a street vendor
  • Strawberry papaya served over a bed of dried squid (sounds gross, but not half bad!)
  • Fish chunks cooked in poi and butter
  • Laulau (steamed pork in leaf wraps)
  • Seaweed with grapefruit juices from trees we picked from on a hike
  • Seaweed soup made from the extra water we boiled

We ate like kings in true Hawaiian fashion. Here's a video of the colorful and delicious meal.

Now, if you're not planning a trip to Hawaii anytime soon (though you should if you can!), you can get a taste of Hawaii by trying out nori at home. A dried edible seaweed made from red algae, nori has been eaten for centuries in China and Japan. Nori is thought to be the only vegetable that contains cobalamin, a type of vitamin B12, in the form that’s actually bioavailable to humans (since cobalamin is otherwise only traditionally found in meat products, nori is particularly beneficial to vegans/vegetarians). Any salad, fish, or occasional rice dish (e.g. a bit of white rice with some wild salmon for dinner) I consume is nearly always neatly wrapped like a sushi hand roll in a nori wrap, which is my go-to substitute for tortillas, grain-based wraps, etc. I like Emerald Cove Nori, which you can get toasted or untoasted, because it's cultivated from certified organic nori spores cultivated in an aquatic environment free of pollutants like nitrogen fertilizer. Aloha!

P.S. One of my daily go-to's for energy, especially when on the go, is HVMN's Ketone-IQ.
