– My New Addictively Good Fermented Pesto Recipe
Here’s a simple kitchen trick that'll give your pesto it’s unique cheesy, “umami” flavor without the parmesan cheese: fermentation.
For this Fermented Nettle-Walnut Pesto recipe, I harvested 8 cups of fresh nettle from my backyard, then put it into a glass mason jar with salt, water and 4oz of leftover brine from an empty pickle jar. I then let it sit on the kitchen counter for 14 days to ferment (nettle takes a bit longer to ferment because it’s lower in natural lactobacilli compared to, say, a cucumber for pickles). Once the fermentation was complete I prepared the pesto as follows:
Into food processor, combine:
– Fermented nettle
– 2 cups walnuts
– 1 cup extra virgin olive oil
– 1 tablespoon sea salt (not necessary, but if you want a bit of extra salt kick, do it)
– 1 tablespoon ground pepper
– Zest of one lemon
Blend for about 60 seconds, until texture is thick and clumpy, but not “runny.” This stuff tastes FABULOUS – I love it with ribeye steak, salmon, or simply on a rice cracker with a bit of fresh tomato. Give it a try and let me know what you think!
