My Nutty Twist On A Traditional Mexican Horchata Drink

My twin sons recently helped me invent a nutty twist on a traditional Mexican horchata drink, using a special ingredient (one of my favorite snacks!).
We’ve tried horchata recipes with different ratios, types of rice and nuts, and various spices, but the king of them all has turned out to be a horchata made of Barukas nuts.
Since they were introduced to me by super foodie Darin Olien, Barukas have remained a staple in our household. They’re pretty much the healthiest nuts on the planet – a mini-cocktail of micronutrients – and perfect fuel for what my sons and I call our Barukas Choco-Horchata. Read on for the recipe:
🥛 1 cup Barukas nuts, soaked in water for 24 hours at room temperature
🥛 4 cups hot (but not boiling) water
🥛 ½ cup organic cacao powder
🥛 ¼ cup sugar, honey, or alternative sweetener
🥛 ¼ tsp salt
🥛 2 tsp cinnamon
🥛 Drain the soaked Barukas nuts and add to a blender.
🥛 Add hot water and blend on high speed until homogenous and almost smooth, about 2 minutes.
🥛 Carefully pour blended nuts through a cheesecloth-lined fine-mesh sieve into a large bowl or pitcher. Gather the ends of the cheesecloth together and squeeze out all remaining liquid.
🥛 Add sugar, honey, or sugar substitute and salt to the horchata liquid and stir together.
🥛 Cool completely, then transfer to a container and store in the refrigerator (stores for up to a week).
🥛 Serve horchata over ice, sprinkled with cinnamon, or if you prefer, warm.
Tip: Don’t toss those soaked nuts from which you’ve strained the “nut milk”! The texture of this “nut pulp” is fantastic for making raw food crusts and bases or as part of a nourishing face and body scrub.
PS: Incidentally, for you cocktail enthusiasts, a local restaurant called “De Espana” serves this same drink as Tiger Nut Horchata with rum on ice. It’s mighty fine. I’m completing my second cookbook, so keep your eyes peeled for updates on its release date.
