New Discoveries Of The Week: Cool New Things I'm Trying, Books I'm Reading, And More!

The Best “Paleo” Fried Chicken Ever (& How To Keep Yourself “Healthy” When Eating Fried Foods

Okay, I know what you’re thinking. You’re seeing the headline for this and asking yourself, “What!? Ben eats fried food?”

Listen, I don’t eat fried food regularly, but I do allow myself to splurge every once in a while, especially if I’m making it myself.

This week, I tried my hand at Southern buttermilk fried chicken, Paleo-style (e.g. no grains and crap), but used ghee (use code BEN10 to save 10%) instead of regular frying oil, and Big Bold Health Himalayan Tartary buckwheat for my flour (OK, OK, it's a grain but hyper healthy and a big feature of my Boundless Cookbook). All you need to do is shake things up in a paper bag with some cornstarch, salt, pepper, and other goodies, and you've got yourself some delicious Southern fried chicken. Here's the full recipe from (with my substitutes):

5 lb whole chicken cleaned and cut into 10 pieces
3 cups organic buttermilk
¼ cup salt
¼ cup sugar

Seasoned flour
1 ¼ tsp garlic powder
2 tsp onion powder
1 ¼ tsp red pepper
1 ¼ tsp chili powder
1 ½ tsp black pepper
1 ¼ tsp paprika
3 tbsp cornstarch
2 cups Big Bold Health Himalayan Tartary buckwheat flour
3 eggs

For the chicken pieces
Enough ghee to cover the chicken
1 ¾ tsp salt

  1. To a large Ziploc bag, add buttermilk, salt, and sugar. Gently mix well. Add the chicken pieces. Refrigerate for 2- 4 hours. Line a rimmed baking sheet with foil or parchment paper.
  2. Remove the chicken from the brine. Pour the brine down the drain. Pat the chicken dry, then place the chicken on a parchment or foil-lined baking sheet.
  3. To a large brown bag or Ziploc add ½ tsp of pepper to the flour and the rest (except for the salt) of the flour ingredients. Mix the flour and seasonings together. Season the chicken with salt.
  4. To a bowl, add 3 eggs and whisk. Add the chicken pieces to the flour and shake the bag to coat the chicken. Remove the chicken and place it the chicken into the egg mixture, then flip the chicken to coat the other side in the egg mixture.
  5. Place the chicken back into the flour and shake to coat again, then place it on the parchment-lined bake tray. Let the chicken sit to absorb the flour for 10-15 minutes.
  6. To a Dutch oven over medium-high heat, add the ghee. The ghee is ready once the temperature reaches 300 F.
  7. Use a thermometer to maintain and track the temp. Add the chicken pieces to the dutch oven but do not overcrowd it. Flip the chicken a couple of times as it cooks. Fry the chicken for 12-15 minutes or until golden brown and the temperature of the fried chicken reaches 165 F. FYI, smaller pieces of chicken will cook faster.
  8. To keep the fried chicken crunchy and crisp, drain the chicken over a wire rack set over a rimmed baking sheet for about 10 minutes. To prevent soggy chicken, do not drain on paper towels.

Paired with some homemade coleslaw and my wife's homemade freshly toasted sourdough bread (her secret recipe can also be found in my Boundless Cookbook), this made for one delicious and as-nutritious-as-can-be meal. The end result was a satisfying crunch on the outside, while remaining juicy and tender on the inside—just how you want your fried chicken to be, no matter how you’re preparing it or what style you're doing.

My secret weapon for making this delicious chicken? Spirulina. In a chapter in my book Boundless, I discuss in detail the benefits of spirulina, a nutrient-dense algae that forms tangled masses in warm alkaline lakes. Spirulina protects your cells from lipid peroxidation when you consume fried foods. Lipid peroxidation is the process by which free radicals “steal” electrons from the lipids in cell membranes, resulting in cell damage. Spirulina also contains some amounts of the amino acid glycine, which contributes to cellular growth and health, but I recommend using a more dense form of glycine such as glycine powder since you'll want closer to 5 grams of it (and 6 grams of spirulina) for the optimal dose to consume when you have potential to consuming damaged oils. Both spirulina and glycine also have anti-inflammatory properties, and help lower cholesterol. (I get into this in-depth in my podcast “Is This The Most Dense Source of Nutrition On The Planet?”.)

Author of The Longevity Solution, The Obesity Fix, and several other books, and former podcast guest of mine James DiNicolantonio (listen here), advises a dose of 5 grams of glycine and 6 grams of spirulina. Taken before consumption of vegetable oil or heated oils, this may serve to counter the cellular inflammatory effects of being exposed to them, such as at a restaurant or from dressings and other processed foods, for example.

Also, emoxypine is a somewhat popular nootropic that seems to protect against oxidation of biomembrane lipids, which means it may also be a good option for those eating PUFAs or fried foods. It also increases binding of GABA and acetylcholine, so may have a bit of an anxiolytic effect, which I suppose could come in handy if you're nervous about what all that fried food may be doing to your precious cells.

Anyways, there you have it! Leave a comment if you try my fried chicken recipe! I highly recommend it for anyone who feels a splurge weekend coming up.

Kickstart Your Fall Health With Kickbutt Biohacking Deals

Labor Day weekend means the official end of summer, and for many of you, a shift into days that are more scheduled.

This can bring increased stress, and if you're in a climate where the days get short and gray, you may also find your mood declining. And, if your activity level decreases (thanks to that schedule and the weather), your stress and mood may be even more impacted.

So this is the time of year when I tell my clients to get ahead of those changes. Investing in some kind of a new biohacking device can not only improve your health, but can kickstart your motivation for self-care. After all, who doesn't love a new toy? To get you going, I arranged special deals with my favorite partners on devices that I rely on daily.

This first offer, and one I use weekly to keep my face looking somewhat young, is from my friends over at HigherDOSE. They're offering 20% off site-wide on any product plus in-location packages (with the exclusion of full-size saunas and subscriptions). Just in time for the cooler weather, their Infrared Sauna Blanket will warm, relax, and heal you from the inside out (it's like curling up with a warm, body-nourishing teddy bear), while their Red Light Face Mask can take care of that summer skin (and they have many other awesome products).

Just click here and use code LDW22 to get 20% off everything from HigherDOSE (not including full-size saunas and subscriptions). Offer runs from 8/29-9/5.

Next up is the Labor Day sale from ChiliSleep Systems (a must-have if you have trouble with your sleep).

ChiliSleep makes customizable, climate-controlled sleep solutions that help you fall asleep, stay asleep and give you the confidence and energy to power through your day. They also make hydro-powered, temperature-controlled mattress toppers that fit over your existing mattress to provide your ideal sleep temperature. These luxury mattress pads keep your bed at the perfect temperature for deep sleep, whether you sleep hot or cold.

Just click here and use code BEN25 for 25% off your Dock Pro Sleep System purchase, or use BEN30 for 30% off your OOLER, and CUBE Sleep Systems. Offer runs from 9/5-9/13.

If the colder weather has you closing your windows, and trying to avoid those winter viruses, you need to check out the AirDoctor air filter.

This thing is crazy effective. It cleans 1,800 square feet of space per hour, generates healing negative ions, sucks up mold, fungus, and anything else that you don't want to be breathing in, and is even smart enough to adjust its fan speed based on the air quality. The AirDoctor now has a permanent place in my office.

Lastly, there's Power Plate.

After extensively using the Power Plate myself, I can tell you it’s a game-changer for my workout efficiency. If you're like me and you want to get the very best tools to help improve your health, then I highly recommend that you invest in a Power Plate. It will save you time and improve the effectiveness of your workouts year-round. The Power Plate can also be a weight management tool because physiologically, when you're standing on or using a vibration platform, your caloric expenditure goes up. There is also evidence behind vibration platforms increasing growth hormone, which helps to maintain, build, and repair healthy tissue, and regulating cortisol to improve recovery.

In this podcast episode with Dr. Jason Convisor, the chief science officer for Performance Health Systems (makers of Power Plate), I detail how to use vibration plates, even more science behind their health benefits, safety, and more.

Product Of The Week:

::: Early Labor Day Savings! Beat Fall Allergies with Molecular Hydrogen & Save 20% :::

While summer is viewed as the peak season for hay fever and allergies, it’s fall that brings with it another set of challenges that often get overlooked.

The biggest allergy culprit in the fall is ragweed, which starts pollinating in late Summer and can continue through October (especially if it’s been a hot summer). Even if ragweed is not common where you live, it can travel hundreds of airborne miles.

About 75% of people who are allergic to spring plants pollinating in the summer are also allergic to ragweed. And as the weather starts to cool and we find ourselves indoors more often, triggers like mold and dust mites also become major culprits for triggering allergies.

This fall, instead of reaching for the Zyrtec, which has been linked with tons of negative side effects like raised blood pressure, consider opting for Molecular Hydrogen. In addition to its unique ability as a selective antioxidant, H2 has been shown to reduce airway inflammation. More specifically, a 2020 study using asthma as a model of allergic inflammation demonstrated that allergic airway inflammation is associated with a metabolic pathway switch from OXPHOS to aerobic glycolysis and that H2 mitigates allergic airway inflammation by reversing this metabolic pathway switch.

This is what makes Active H2 + Chromax from Water & Wellness the ideal fall allergy buster. With added metabolic benefits from the addition of Chromax, this stuff is Molecular Hydrogen on steroids.

Not only is this a good time to stock up on Chromax before fall allergies hit, Water & Wellness is hosting a Labor Day Sale for 20% off now through Monday, September 5. Go here today and stock up!
