The Best “Paleo” Fried Chicken Ever (& How To Keep Yourself “Healthy” When Eating Fried Foods

Okay, I know what you’re thinking. You’re seeing the headline for this and asking yourself, “What!? Ben eats fried food?”

Listen, I don’t eat fried food regularly, but I do allow myself to splurge every once in a while, especially if I’m making it myself.

This week, I tried my hand at Southern buttermilk fried chicken, Paleo-style (e.g. no grains and crap), but used ghee (use code BEN10 to save 10%) instead of regular frying oil, and Big Bold Health Himalayan Tartary buckwheat for my flour (OK, OK, it's a grain but hyper healthy and a big feature of my Boundless Cookbook). All you need to do is shake things up in a paper bag with some cornstarch, salt, pepper, and other goodies, and you've got yourself some delicious Southern fried chicken. Here's the full recipe from www.whiskitrealgud.com (with my substitutes):

Brine
5 lb whole chicken cleaned and cut into 10 pieces
3 cups organic buttermilk
¼ cup salt
¼ cup sugar

Seasoned flour
1 ¼ tsp garlic powder
2 tsp onion powder
1 ¼ tsp red pepper
1 ¼ tsp chili powder
1 ½ tsp black pepper
1 ¼ tsp paprika
3 tbsp cornstarch
2 cups Big Bold Health Himalayan Tartary buckwheat flour
3 eggs

For the chicken pieces
Enough ghee to cover the chicken
1 ¾ tsp salt

  1. To a large Ziploc bag, add buttermilk, salt, and sugar. Gently mix well. Add the chicken pieces. Refrigerate for 2- 4 hours. Line a rimmed baking sheet with foil or parchment paper.
  2. Remove the chicken from the brine. Pour the brine down the drain. Pat the chicken dry, then place the chicken on a parchment or foil-lined baking sheet.
  3. To a large brown bag or Ziploc add ½ tsp of pepper to the flour and the rest (except for the salt) of the flour ingredients. Mix the flour and seasonings together. Season the chicken with salt.
  4. To a bowl, add 3 eggs and whisk. Add the chicken pieces to the flour and shake the bag to coat the chicken. Remove the chicken and place it the chicken into the egg mixture, then flip the chicken to coat the other side in the egg mixture.
  5. Place the chicken back into the flour and shake to coat again, then place it on the parchment-lined bake tray. Let the chicken sit to absorb the flour for 10-15 minutes.
  6. To a Dutch oven over medium-high heat, add the ghee. The ghee is ready once the temperature reaches 300 F.
  7. Use a thermometer to maintain and track the temp. Add the chicken pieces to the dutch oven but do not overcrowd it. Flip the chicken a couple of times as it cooks. Fry the chicken for 12-15 minutes or until golden brown and the temperature of the fried chicken reaches 165 F. FYI, smaller pieces of chicken will cook faster.
  8. To keep the fried chicken crunchy and crisp, drain the chicken over a wire rack set over a rimmed baking sheet for about 10 minutes. To prevent soggy chicken, do not drain on paper towels.

Paired with some homemade coleslaw and my wife's homemade freshly toasted sourdough bread (her secret recipe can also be found in my Boundless Cookbook), this made for one delicious and as-nutritious-as-can-be meal. The end result was a satisfying crunch on the outside, while remaining juicy and tender on the inside—just how you want your fried chicken to be, no matter how you’re preparing it or what style you're doing.

My secret weapon for making this delicious chicken? Spirulina. In a chapter in my book Boundless, I discuss in detail the benefits of spirulina, a nutrient-dense algae that forms tangled masses in warm alkaline lakes. Spirulina protects your cells from lipid peroxidation when you consume fried foods. Lipid peroxidation is the process by which free radicals “steal” electrons from the lipids in cell membranes, resulting in cell damage. Spirulina also contains some amounts of the amino acid glycine, which contributes to cellular growth and health, but I recommend using a more dense form of glycine such as glycine powder since you'll want closer to 5 grams of it (and 6 grams of spirulina) for the optimal dose to consume when you have potential to consuming damaged oils. Both spirulina and glycine also have anti-inflammatory properties, and help lower cholesterol. (I get into this in-depth in my podcast “Is This The Most Dense Source of Nutrition On The Planet?”.)

Author of The Longevity Solution, The Obesity Fix, and several other books, and former podcast guest of mine James DiNicolantonio (listen here), advises a dose of 5 grams of glycine and 6 grams of spirulina. Taken before consumption of vegetable oil or heated oils, this may serve to counter the cellular inflammatory effects of being exposed to them, such as at a restaurant or from dressings and other processed foods, for example.

Also, emoxypine is a somewhat popular nootropic that seems to protect against oxidation of biomembrane lipids, which means it may also be a good option for those eating PUFAs or fried foods. It also increases binding of GABA and acetylcholine, so may have a bit of an anxiolytic effect, which I suppose could come in handy if you're nervous about what all that fried food may be doing to your precious cells.
