In this weekly post, I share with you my most interesting discoveries of the week, including the latest news on the fronts of fitness, nutrition, health, wellness, biohacking, and anti-aging research. New Discoveries

How I Turned Heart & Liver Into a Mitochondria-Boosting Feast (And Yes, It Tastes Amazing!)

After recording a recent podcast with health expert Morley Robbins on the overlooked mineral dynamics behind fatigue, I found myself thinking a lot about upping my intake of bioavailable copper and heme iron. 

One of the best ways to do that? Clean, high-quality organ meats. 

Add in the mitochondrial benefits of heart, specifically, and I decided to fire up some heart-and-liver magic for dinner—courtesy of one of my go-to clean meat sources: US Wellness Meats.

Here are a few of my favorite “make organ meats taste amazing” hacks:

1) Soak overnight.

This tenderizes, removes the gaminess, and improves texture. Milk or kefir works great… but anything with carbonic acid does the trick. I didn’t have dairy, so I soaked mine overnight in LMNT Grapefruit. Yes, really—and it worked perfectly.

2) Morning water bath.

Pop the organs into a quality sous vide bag (I like Stasher) with your marinade. I used Primal Kitchen dressing and Joey’s Hot Sauce for a clean, flavorful combo.

3) Sous vide for 8–10 hours.

I run mine in a water bath with the Joule sous vide wand. Slow, low, perfect every time.

4) Quick pan-finish.

Slice the heart thin. Keep the liver as “steaks.” Fry both in butter for 2–3 minutes per side. Meanwhile, whisk the sous vide juices with a tablespoon of flour or starch to create a rich, silky gravy.

5) Pour that goodness on.

Drizzle the gravy over everything and serve.

I promise, you’ll stop saying organ meats “taste weird” or “have a strange texture.” This is how to do it, folks. ️
