2 Of My Must-Try Recipes That Feature A Quite Underrated Kitchen Hero

A natural treatment for centuries for various ailments, such as cleaning ulcers and sores, vinegar is still used today as a home remedy for coughs, insect stings, and warts.
Vinegar also has cardiovascular benefits, as it can help lower blood pressure and reduce the risk of fatal ischemic heart disease. Moreover, consuming vinegar regularly has been associated with anti-tumor activities and can help regulate blood sugar levels. It contains polyphenols, which are also found in fruits, vegetables, wine, coffee, and chocolate, and may help lower the risk of chronic diseases.
The ways you can add vinegar to your diet to improve your health go way beyond drizzling it on your salad with a little olive oil – though for that, you'll want to pick up TJ's olive oils, too. TJ recently shared two of his favorite vinegar recipes with me – a shrub cocktail and a deglazed pear balsamic pork chop – and I was blown away by both (listen to that podcast here).
Calamansi Vinegar Shrub Cocktail:
For the shrub cocktail – which is perfect for reducing the glycemic index of the meal and aiding digestion – I used:
🍐 Calamansi vinegar from Greenfield Pantry
🍐 Shiso leaf (and for more about shisho and shisho recipes, check out my sons' GoGreenfields episode here!)
🍐 Rum
🍐 Sparkling water
🍐 Salt
🍐 Splash of lime or lemon juice
Prepare your shrub cocktail by combining Calamansi vinegar with rum, sparkling water, and a touch of salt in a glass jar. Let it sit for about six hours, then strain and serve it with your meal.
Deglazed Pork Chop
For the pork chop, I used:
🍐 US Wellness Meats bone-in pork chop
🍐 Dijon mustard
🍐 Shiso leaf
🍐 Salt
🍐 Grains of Paradise pepper (the pepper that “burns fat,” look it up!)
🍐 Pear balsamic vinegar from Greenfield Pantry
🍐 Olive oil
🍐 Butter
🍐 Onion
To prepare the pork chop:
🍐 In a bag, season the bone-in pork chop with shiso leaf, Dijon mustard, salt, and Grains of Paradise pepper.
🍐 Preheat the oven to 145 degrees Fahrenheit.
🍐 Cook the seasoned pork chop for about 2.5 hours.
🍐 While the pork chop is cooking, prepare the glazed onions by caramelizing them in butter in a pan and setting them aside.
🍐 Baste the pork chop with a little bit of juices from the seasoning bag, but leave most of the juices for deglazing.
🍐 Sear the pork chop for four minutes on both sides.
🍐 Deglaze the pan by adding the reserved juices from the seasoning bag and scraping the brown bits of pork chop – add the glazed onions to the pan and cook down for a few minutes.
🍐 Serve the pork chop with the glazed onions and drizzle with the pear balsamic vinegar sauce.

Why I Eat Baby Food
Alright, I admit it…I don’t have a baby, at least not right now.
My twin boys are 15 now, and the days of baby food are long gone. But baby or no baby, there’s still baby food and formula holding a hallowed place in the pantry at the Greenfield house.
