My Latest Fascinating Discoveries: Cool New Things I'm Trying, Books I'm Reading, And More!

Just About The Only Bread I Eat – My Wife's Much-Requested Sourdough Bread Recipe, In Full Detail.

Jessa Greenfield’s “World Famous Sourdough Bread” is a testament to her patience and care…

…and it’s also the most-requested recipe in the Greenfield family recipe archives. Here’s a look at the recipe (you can find even more of the nitty-gritty preparation tips in my “Boundless Cookbook.”).

While this recipe may seem somewhat advanced, once you've got it down I bet you'll agree that it is the best sourdough you've ever eaten. Now that more and more people understand the health benefits of fermented wheat, there are plenty of helpful tutorials online if you want to master the preparation.

Here's what you'll need and a how-to of how to do it:

Ingredients:

👉🏼 2 cups sourdough starter (a fermented, 2-ingredient mixture of water and flour)

👉🏼 2 cups pure, lukewarm water

👉🏼 4 teaspoons salt

👉🏼 6 cups Einkorn flour

👉🏼 Cornmeal to lightly coat a pot

Instructions:

👉🏼 Combine the starter, water, and salt in a large bowl, stir, then let stand for 5 minutes.

👉🏼 Start adding flour – begin with 2 cups of flour, and let it sit for 5 minutes.

👉🏼 Add another 1 cup of flour and let it sit for 5 minutes.

👉🏼 Continue adding ½ cup at a time so the dough doesn’t get too stiff.

👉🏼 When all flour is added, let your dough sit for 8-12 hours at room temperature.

👉🏼 After the first rise, heavily flour a surface and pour out the dough – use a pastry knife to shape the dough into a ball.

👉🏼 Grease the bowl your dough just came from and set the dough back into the bowl for a second rise – which will take 3-5 hours.

👉🏼 Before cooking the bread, soak a clay pot in water for 30 minutes.

👉🏼 Place the pot in a cold oven, then set the oven to around 550 degrees.

👉🏼 Once the oven hits 550 degrees, take the pot out.

👉🏼 Sprinkle cornmeal on the bottom of the pot, then loosen the dough and pour it into the pot.

👉🏼 Put the lid on the pot immediately, put the pot into the oven, take the temperature down to 450 degrees, and cook for 40 minutes.

👉🏼 Remove the lid from the pot, take the temperature down to 350 degrees, and cook for another 15 minutes.

👉🏼 Take the bread out, and let it cool completely before cutting.

I hope you get get a chance to make Jessa’s recipe. I like mine slathered up with a bit of raw honey and coarse salt, FYI, or for a real treat, roasted bone marrow. :)

What does your foot care routine look like lately?
