My Latest *Delish* Chocolate-Peanut Butter Keto Brick Cheesecake Recipe
You learned about the amazing keto brick here.
Basically, Keto Bricks are one of my favorite sources of on-the-go nutrition, with each “brick” (yes, they're big) packing 1,000 calories, with roughly 90 grams of fat, 30 grams of protein, and only 14 grams of total carbs.
I bring these with me when I'm hiking or hunting, and if you're an active person who needs massive amounts of low-carb calories for mountaineering, hiking, hunting, etc. I cannot recommend these enough. They are even shelf-stable above room temperature, which is great for long, hot hiking days.
The ingredient profile is clean and packed with nutrition. For example, here are the ingredients of the Buttered Maple Pecan flavor:
- Raw Organic Cacao Butter
- Grass-Fed Whey Protein (Maple Pecan)
- Pecan Butter (Roasted Pecans)
- Organic Ceylon Cinnamon Powder
- Himalayan Sea Salt
Other flavors include ingredients like organic golden flaxseed meal, raw organic fermented cacao nibs, sacha inchi protein, and even ground coffee beans.
But these things are versatile for more than just chopping and eating. You can actually melt down an entire Keto Brick to make some of the most creamy and delicious cheesecake you’ll ever have in your life. While I prefer the buttered maple pecan flavor or chocolate peanut butter for this recipe, you may also want to experiment with Milk N’ Cookies, Peanut Butter or Toasted Almond Coconut!
-1 cup almond flour
-1/2 Keto Brick, melted (I melt over low-to-medium heat in a pot over the stovetop and stir frequently as it melts to keep it from burning, mostly because I’m too lazy to use a double-boiler setup, which works even better).
-½ tsp vanilla extract
-2 tbsp granulated sweetener
-1 large egg
-1 large egg
-2 tbsp monkfruit, allulose, or stevia
-4 oz cream cheese or coconut cream, room temperature
-1 tbsp sour cream or full-fat yogurt or coconut yogurt
-1 tsp maple or vanilla extract
-½ Keto Brick, also melted
-½ cup pecans or walnuts, chopped
- Preheat the oven to 350°F.
- Mix the almond flour (you can also use coconut flour if desired) with the melted half-brick, vanilla, and sweetener. Add in egg and combine.
- Spread this mixture onto a lightly greased cake mold, loaf pan or baking pan, pressing it in with your fingers. Form a short lip around the pan. Bake for 10 minutes at 350°F.
- Remove crust from oven and allow to cool on counter or in fridge.
- Chop pecans or walnuts and evenly sprinkle over the cooled crust. Save a little extra for the topping if you want.
- Mix melted half brick, cream cheese or coconut cream, sour cream or yogurt, sweetener, maple or vanilla extract, and egg (you can just mix this all up in the same pot you melted the brick in if you allow it to cool slightly so the egg doesn’t cook).
- Pour filling over the crust and spread, ensuring there are no exposed areas.
- Bake for 20-25 minutes at 350°F, or until the middle is set. Let cool then refrigerate, preferably overnight.
- Sprinkle with toppings like nuts, goji berries, blueberries, drizzled honey, low-sugar chocolate chips, or any other topping of your choice! Cut into slices if using a loaf pan or squares if using a brownie pan.
