New Discoveries

*Indulge* in an Unforgettable Feast with My Recipe for Buttery Braised Ribeye Steaks 🥩🍽️

Who says you can't elevate a ribeye steak with the magic of braising?

Sure, braising is usually reserved for “tougher cuts” of meat, but I took my latest obsession with braising—inspired by the cookbook “All About Braising — The Art Of Uncomplicated Cooking” and applied it to some stunning grass-fed, grass-finished ribeye steaks from US Wellness Meats (use code BEN to save 15% off your first two orders). The result? A nutrient-packed, hearty steak that’s easy to make and incredibly delicious.

Here’s how you can make my latest culinary masterpiece at home—it's super simple (and absolutely mouthwatering!):

Prep the steaks (and a roasting pan you'll use later):

  • Salt the steaks generously and let them sit on a rack in the fridge for 1 hour.
  • In a roasting pan, add 1 tablespoon of butter per steak (I used rich New Zealand butter from US Wellness Meats) and 2 tablespoons of olive oil per steak.
  • Top with a sprinkle of salt and pepper, diced tomatoes, onions, and a splash of Joey's Hot Sauce (use code BEN20 to save 20% off) for a bit of kick.

Braise the steaks and finish cooking them:

  • Remove the steaks from the fridge and place the rack of steaks over the roasting pan.
  • Preheat your grill or oven to 185°F (85°C) and cook the steaks low and slow for 1 hour. (I used a Traeger with cherry pellets for that extra smoky flavor.)
  • Increase the heat of the grill or oven to 325°F (163°C). Transfer the steaks to the roasting pan and add a few lemon slices to each steak.
  • Cover with parchment paper and cook for another 1 hour.
  • Remove the steaks from the roasting pan, raise the heat to 500°F (260°C), and give each steak a quick 2-minute sear on each side.

Pair the steaks with *this* savory gravy I created (highly recommended):

  • In the same roasting pan, combine the tomatoes, onions, butter, olive oil, and steak drippings. Simmer with 1/4 cup flour to create a rich, thick gravy.

Enjoy the incredible, buttery goodness of this braised ribeye steak. Let me know if you try it and how it turns out in the comments below!

How DANGEROUS Plaque Accumulates in Your Arteries (& Lifestyle Changes to Reverse It!) 🫀🔄

Ever wondered why your arteries can turn into a ticking time bomb that can negatively impact your health and longevity?

New research published in Nature Reviews Cardiology digs into the nuts and bolts of how plaque builds up over time and sheds light on the mechanisms behind it.

Here’s the scoop: Over the years, factors like high blood pressure, unstable blood sugar, smoking, weight gain, poor blood clotting (thanks to vitamin K deficiency — you can read more about how to remedy that issue here), and consuming oxidized oils damage your arterial walls.

Picture it like a slow-motion car crash where each of these elements adds another dent to your arterial road. This cumulative damage fosters a breeding ground for plaque, which can build up and put you at risk for serious cardiovascular events, such as heart attacks and strokes.

So, what’s the solution for decreasing plaque build-up in your arteries? Implementing the following strategies can effectively address the issue:

  • Control your blood pressure: Maintain optimal blood pressure through regular physical activity, stress management techniques, and a balanced diet rich in fruits, vegetables, and whole grains. This helps mitigate the risk of endothelial dysfunction and subsequent plaque formation.
  • Stabilize blood sugar: Adopt a low-glycemic index diet to prevent chronic hyperglycemia. Incorporate consistent physical activity and monitor blood glucose levels to reduce the risk of insulin resistance and related complications.
  • Quit smoking and vaping: Eliminate tobacco and nicotine use, which contribute to endothelial damage and accelerated atherosclerosis (the thickening or hardening of the arteries). Replace these habits with healthier stress-relief practices such as meditation, breathwork, cold exposure, and regular exercise (and if that doesn't work, here are a few biohacks to get you through nicotine withdrawals).
  • Manage weight: Focus on consuming nutrient-dense, whole foods and engage in regular physical activity to achieve and maintain a healthy weight. This helps reduce the risk of metabolic syndrome (a cluster of conditions, including abdominal obesity, insulin resistance, high blood pressure, dyslipidemia, and elevated fasting blood sugar, which increases the risk of cardiovascular disease and type 2 diabetes).
  • Support blood clotting: Ensure adequate intake of vitamin K through green leafy vegetables and high-quality supplements (I recommend Patrick Theut's Koncentrated K). Vitamin K plays a crucial role in maintaining proper blood coagulation and vascular health. Or for a more complete heart health formula, check out the one I formulated at Vitaboom.
  • Avoid oxidized oils: Refrain from consuming processed oils like sunflower, safflower, and “vegetable oil,” which can contribute to oxidative stress and inflammation. Opt instead for fresh, unprocessed fats such as extra-virgin olive oil, coconut oil, and avocados.

By tackling the key areas of arterial health above, you’ll not only prevent plaque build-up but also set yourself up for long-term cardiovascular and metabolic health. By implementing these changes today, you can initiate the process of maintaining clear and healthy arteries!
