Mix Up Your Cocktail Hour With New Natural, Healthy “Keto” Wine Infusions
If you've been following me for a while, you know that I frequently enjoy a nice glass of biodynamic Dry Farms Wine. As I talk about in this podcast with Dry Farms Wine founder Todd White, it's so important for your health to drink wine that's natural, organic, additive-free, “keto friendly” and low-alcohol.
Mixing it up (get it?) with cocktails is fun, though, and so when I heard that Dry Farms was creating a sister company producing natural wine botanical elixirs, I couldn't wait to try them. The wine-based infusions from bolixir (botanical + elixir) are mindfully low in alcohol (6-9% ABV), rich in plant-based herbal benefits, and certified by the same rigorous quality standards as Dry Farm Wines. The elixirs are also organic, biodynamic, sugar-free, and keto/paleo-friendly, with the grapes and herbs grown and hand-harvested by small family farms in limited batches.
The limited first-release bolixir selections include Dandelion White (natural white wine infused with organic mint, dandelion, and nettle), Lavender Red (natural red wine infused with organic lavender, rose, and nettle), Elderflower Bubbles (natural sparkling white wine infused with elderflower), and Rose Blossom Bubbles (natural sparkling red wine infused with rose blossom. My friends at Dry Farms Wine sent me the first-release selections and my wife Jessa and I loved all of them.
You'll Be In Food Heaven With This Tasty Carnivorous Recipe
Today I tried my hand at cooking Oxtail, as my friends at US Wellness Meats (use code BEN to save 15%) often send up some random cut of meat I have no clue how to cook but get curious about anyways…
What is oxtail? Oxtail has associations with traditional English cooking, with many Brits apparently growing up with the smell of tinned oxtail soup wafting through their kitchens. Not quite so in America, but still, with nose-to-tail eating an emerging trend, cuts like this are becoming more popular, and the promised rich, beefy goodness of oxtail intrigued me. Rich in gelatin, there will be a piece of bone and some marrow in the middle of each one. The meat is tough so it’s best when it is cooked slowly to soften it up in stews and soup (just like Grandma used to make!).
So how do you “soften” up a cut as tough as a “tail”? I decided to try cooking it sous vide style in plastic-free “Stasher” bags with my Joule sous vide wand for 24 hours (yep a whole day!) at 145F, with an entire bottle of Primal Kitchen turmeric and avocado oil marinade (use code BEN for 10% off) tossed into the bag along with the oxtail.
Then I simply gave it a quick sear in olive oil for 4 minutes per side or until nice and brown.
The result? A wonderful savory, juicy, melt-in-the-mouth dish that I think will impress any carnivorous folks out there. Try serving this over mashed cauliflower with butter, some kind of mashed or roasted pumpkin or squash, a touch of a good hot sauce, and a side salad, and you'll be in food heaven.
